Confessions of a Chocoholic: Chocolate Cloud Cookies


Good morning lovelies!!!
As some of you know already, other than loving all things beauty, I am very passionate about cooking and baking and together with my boyfriend we spend most of our time (and money) cooking delicious and simple meals melting together my Italian and his Dutch traditions. You have probably seen on my Christmas Haul post (here) some of our more complex endeavors during the festivities. In 2015 I would like to bring a bit more of this other passion of mine into the blog, in the form of a monthly post in which I share some of my favorite recipes and tips.

To chose the first recipe to post, I went for the one all my friends loved the most and they are the Chocolate Cloud Cookies. This is the name that these cookies were given because (and I quote) "it feels like a cloud of chocolate exploded in your mouth". I guess that's a pretty good reaction don't you think? I got this recipe over on Ho volglia di dolce, a big Italian baking blog annexed to the Giallo Zafferano family. You can find the original recipe here. Chocolate Cloud Cookies: I made small packages for my friends for Christmas and they loved them!

Ingredients:
  • 220 gr. of white flour
  • 2 eggs
  • 250 gr. of pure chocolate
  • 100 gr. of fine sugar
  • 60 gr. of butter
  • half tablespoon of baking powder
  • vanillin (aka vanilla flavored sugar, one pouch)
  • icing sugar to decorate
  • a pinch of salt
Procedure:

Melt the chocolate au bain marie or in the microwave, when it is melted, add the butter in small pieces and mix together. If you don't have a bain marie pot, like me, use a glass bowl in a pot of boiling water and cut the chocolate in small pieces to speed up the melting process. In a seperate bowl whisk the eggs with the sugar until light and foamy. In another bowl mix the fry ingredients: flour, baking powder and vanillin. Then pour the molten chocolate (that now will be around room temperature) in the egg mixture and mix well. Finally add gradually the dry ingredients and mix gently. The dough will become tough and when mixed well leave to rest in the fridge for at least one hour. Once the time has passed, with a spoon and your hands fastly form balls and roll them in icing sugar. Then place them on a baking tray covered in grease proof paper, taking care to leave enough space between them so that they can grow during baking. While the dough is still cold, bake them in a preheated oven at 180 degrees C for 15 minutes. The oven time depends on the size of the balls, because the idea is that you obtain cookies that are crunchy on the outside and soft and molten inside. Finally, let them cool down and rest for 10 minutes before eating them. They keep well for up to 5 days if you manage not to eat them all at once. 

As I said, this amazing recipe from Ho voglia di dolce was a great success and even my boyfriend's mother wants the recipe so I really hope you will try and enjoy these Chocolate Clouds for yourself.
